In between Escalante and Boulder, Utah, is the most unexpected coffee house. The architecture is amazing, with tree trunks as pillars and huge sheets of glass or plexiglass forming the walls between the trunks. The view is spectacular, with a river and the Grand Staircase Escalante National Monument as a backdrop. The espresso was great, too.
